I’m not an aerospace glib, but I believe they used two or three wings because the planes had to be really, really light and multiple surfaces reduced loading. Once engines, designs and materials got better, the planes could survive in the monoplane configuration.
Bigger engines is the more useful answer though.
Biplanes don’t generate twice the lift because of airflow interference between the wings but they do have more lift per unit length of wing than monoplanes, therefore they are able to fly with smaller engines. However, they are limited in speed because of excess drag.
As engines evolved, biplanes lost their usefulness.

One long wing is far more efficient than two short wings. So yes, once we could build long wings that wouldn’t break under the load of high speed maneuvers, there was no need to make bi-planes or tri-plane.s

But the main reason is that they’re inefficient, and don’t really do much that a monoplane can’t.
They produce a lot of drag compared to the amount of lift they produce, meaning they use a lot of fuel to travel the same distance. They have fairly poor visibility, which is usually considered a bad thing!
They do have a few advantages – they have a good roll rate, making them quite maneuverable, and they have a very low stall speed and can fly on little power, meaning they can fly slowly very well (where their increased drag doesn’t make much difference: drag increases with the square of airspeed)
Overall, though, the above makes them suited only to aerobatics, which can also be performed by monoplanes. Advances in wing design and composite materials take away most of the advantages of a biplane for any other use: ie actually travelling (the main purpose of an aeroplane) and carrying a load.
Overall, then, they’re more complex than a monoplane, less efficient, and aren’t much more manoeuverable. They have more disadvantages than advantages.

Air is weird, you can do some things (like curving a surface or putting bumps on a surface) that you would think cause a problem but in the right spot help.

Monoplanes are the default configuration: you only ever added more wings because you didn’t (yet) have the structural insight to cantilever a single set of wings. Bi-plane wings are actually tressels: think of the wing(s) assembly as the primary element with the fuselage shoe-horned in later. Once they figured out how to lever a wing to stand out from the body, all the earlier busy-weight and confusion and nonsense was dispensed with.
I don’t know the actual distance, but at some point and at some temperature (viscosity) and air-speed the fast air moving over the top of a bottom wing is disturbing the slow air moving under its upper wing. Without suitable cantilever, that means the wings must be held apart (together?!) structurally (struts and wires); the wider that separation, the less viscous interference you’d have between the wings, but, of course, the more weight. And it’s got to be wide enough to work (take off and land) on a worst-case day: short runway, no head-wind, hot dry day with low barometer. What a mess for bicycle mechanics to figure out.

That said, almost every train engine nowdays is a big diesel engine connected to a generator that produces electricity for the electric drive motors.
A diesel or turbine engine can be made to run extremely efficiently (bsfc) if you don’t have to vary the engine speed much.
Also electric motors have ultra-high starting torque to get that mass moving.
Or to say the same thing, you can run the diesel at it’s optimal rate and vary power from the generator for 90% of operations.
